Eggbeaters is you care mostly about weight.
Shimano SPDs if you care about;
Reliability
Strength
Safety (they will release easily heel-in or heel-out, unlike eggs, and they won't release when the mech bounces on a rock)
Adjustability
I've been through multiple eggs and mallets, and I think that the eggs are a good minimalist design, but that's where it ends. There are several disadvantages, especially when they put a cage around it.

Shimano 647s are good clipless AM/FR/DH style pedals too if you're not a Crank Brothers' fan. Crank Brothers makes very good stuff, but I'm not into their design because it will absolutely not allow release until you move the cleat on the shoe the required amount of degrees. Shimano allows release at any point by tension adjustment. This is not a problem for most riders, and it doesn't seem to be a problem for anyone when you're knowingly clipping out. It can be a problem when you have one of those milli-second Oh Sh!t moments when the crash was a total surprise. I can keep my Shimanos adjusted with good retention tension but enough "softness" to allow a release during an unexpected get-off, so I'm not tied to my bike. You'll usually release from CB pedals in a similar crash because your feet will turn a few degrees in a crash, but there are times that one or both shoes will stay lined up enough to retain your shoe. That's the only issue I have with the CB design...still, very good pedals, and a good company to deal with.
